New eats: Ramen Ron, Pilya's Kitchen in spicy limited-time collab

Ramen Ron and Pilya's Kitchen, both Michelin-recognized establishments, have joined forces for a limited-time menu that celebrates Japanese and Chinese flavors with a dash of spice.

Ramen Ron and Pilya's Kitchen, both Michelin-recognized establishments, have joined forces for a limited-time menu that celebrates Japanese and Chinese flavors with a dash of spice. 

The collaboration resulted in three dishes that will be available at Ramen Ron starting Wednesday, August 5, but one of them will only be sold for two days. 

The Dan Dan Biang Biang Noodles (P690) combines the signature hand-pulled noodles of Pilya's Kitchen with Ramen Ron's dan dan-inspired sauce with sesame, chili, miso, and ground pork. 

The savory and creamy sauce had just the right amount of heat and beautifully coated the chewy, ribbon-like noodles, with the cucumber and leeks adding color and texture to the dish. This can only be ordered at Ramen Ron's branch at Bonifacio Global City (BGC) on August 5 and 6, so don't miss it. 

For the rest of the month, diners at Ramen Ron BGC and Rockwell can enjoy the Mapo Tofu Ramen (P690) and Mala Gyoza (P370), but only 30 servings of each dish will be served daily. 

The thick, bright red Mapo Tofu Ramen is a fun take on the Sichuan classic. It can seem daunting at first glance but the spice level is actually manageable, yet still satisfying (the mapo tofu toppings easily pair well with rice, if you want more carbs). 

But the favorite on our table during the media preview was the addictive Mala Gyoza, which keeps things simple with pan-fried dumplings (juicy filling, crispy bottom) and a fiery, oily sauce.

"This collaboration is a celebration of two kitchens brought together by a shared love for noodles, craftsmanship, and creating food that brings people together," said Kriza Palmero, founder and executive chef of Pilya's Kitchen, a Michelin Bib Gourmand 2026 awardee.

Amado Fores, founder of AF Hospitality which runs the Michelin-selected Ramen Ron, for his part said they have always admired what Palmero has built with Pilya's Kitchen.

"Like Ramen Ron, it’s a restaurant rooted in dedication to handmade ingredients, and bold, comforting flavors," he said. "It's a chance to work together in a way that feels exciting while staying true to what each of us does best."
